(We needed to do this because of a wrist problem.)
It is hand-crafted from 48A stainless steel, one of the few favorite steels of both knifemakers and chefs. It keeps its edge, and is easy to sharpen. The thin blade (.078') is flat ground for easy cutting and movement around vegetables. The Drop Handle helps you hold the blade at a comfortable correct angle for extended use. No bolsters and full wooden handles for lightness.
